What the highlights mean
Could be animal- or plant-derived
- たんぱく加水分解物 protein hydrolysate: Broken-down protein from soy or wheat, or from meat or fish.
- 油脂 fats and oils: Can be vegetable or animal fat; labels usually say 植物油脂 when it's vegetable.
- 調味料(アミノ酸等) seasoning: Usually MSG and nucleotides fermented from sugarcane or starch. But a few amino acids and nucleotides allowed under this name come from animals (feathers, gelatin, fish), and the label doesn't say which were used.
Look animal-derived, but aren't
- 豆乳 soy milk: Soy milk.
Dried rice noodles with a soya-milk tonkotsu-style soup, 136 g per serving. Sold in supermarkets nationwide and through the maker's online shop.
